# How-To Steps:

01 - Preheat oven to 325°F. Lightly grease a 9-inch springform pan or line with parchment paper.
02 - In a small bowl, combine breadcrumbs, melted butter, oregano, and pepper. Press the mixture firmly into the bottom of the prepared pan.
03 - Bake the crust for 8 minutes. Remove from oven and let cool slightly.
04 - In a large bowl, beat cream cheese, ricotta, and Parmesan until smooth and creamy. Add eggs one at a time, mixing well after each addition.
05 - Stir in thyme, lemon zest, milk, chopped olives, chives, salt, and pepper. Mix until fully combined and uniform.
06 - Pour the filling over the cooled crust. Smooth the top with a spatula to create an even surface.
07 - Bake for 25 to 28 minutes, or until the center is set but still slightly wobbly when gently shaken.
08 - Remove from oven and cool to room temperature. Refrigerate for at least 2 hours before serving to allow flavors to meld.
09 - Before serving, top with sliced olives, chopped parsley, and a drizzle of olive oil. Slice into small wedges or squares.

# Expert Tips:

01 -
  • The salty tang of Kalamata olives cuts through the rich creaminess in the most addictive way
  • It looks impressive but comes together faster than youd think
  • Guests never guess what theyre eating until that first surprising bite
02 -
  • Overbaking makes the texture grainy and dry
  • The cheesecake needs that full chill time to set properly
  • Room temperature ingredients prevent lumpy filling
03 -
  • Run a knife around the edge before releasing the springform
  • Chop the olives fairly small so they distribute evenly
